Chocolate Peanut Butter Cookies

 



Ingredients

  • 1/2 cup (1 stick) butter, softened

  • 1/2 cup granulated sugar, plus more for shaping the cookies

  • 1/2 cup packed light brown sugar

  • 1 large egg

  • 1 tsp. vanilla extract

  • 1/2 cup creamy peanut butter

  • 1 cup all-purpose flour

  • 1/2 tsp. baking soda

  • 1/2 tsp. salt

  • 1/2 cup unsweetened cocoa powder

Directions

  1. Prepare oven and pan:

  2. Preheat oven to 350°F. Line a baking sheet with parchment paper.

  3. Cream butter and sugars:

  4. Beat the butter, granulated sugar, and brown sugar with an electric mixer on medium speed until light and fluffy.

  5. Add egg and extract:

  6. Mix in the egg and vanilla extract until fully combined.

  7. Next, mix in the peanut butter until smooth.

  8. Mix in dry ingredients:

  9. Stir together flour, baking soda, salt, and cocoa powder in a small bowl.

  10. Gradually mix the dry ingredients into the wet ingredients until a soft dough forms.

  11. Chill the dough for 15 minutes.
  12. Scoop cookies:

    Scoop out tablespoon-sized balls of cookie dough and roll into a ball. Arrange on prepared baking sheet. Dip a fork in sugar and then gently flatten each ball of dough with the tines of the fork. Dip the fork in sugar before pressing each cookie.

  13. Bake cookies:

    Bake the cookies for 8-10 minutes or until just set. Do not overbake. Let cookies cool on the pan on a cooling rack 10 minutes.

  14. Remove the cookies from the pan and transfer to a cooling rack; let cool completely.
