Ingredients
1/2 cup (1 stick) butter, softened
1/2 cup granulated sugar, plus more for shaping the cookies
1/2 cup packed light brown sugar
1 large egg
1 tsp. vanilla extract
1/2 cup creamy peanut butter
1 cup all-purpose flour
1/2 tsp. baking soda
1/2 tsp. salt
1/2 cup unsweetened cocoa powder
Directions
Prepare oven and pan:
Preheat oven to 350°F. Line a baking sheet with parchment paper.
Cream butter and sugars:
Beat the butter, granulated sugar, and brown sugar with an electric mixer on medium speed until light and fluffy.
Add egg and extract:
Mix in the egg and vanilla extract until fully combined.
Next, mix in the peanut butter until smooth.
Mix in dry ingredients:
Stir together flour, baking soda, salt, and cocoa powder in a small bowl.
Gradually mix the dry ingredients into the wet ingredients until a soft dough forms.
- Chill the dough for 15 minutes.
Scoop cookies:
Scoop out tablespoon-sized balls of cookie dough and roll into a ball. Arrange on prepared baking sheet. Dip a fork in sugar and then gently flatten each ball of dough with the tines of the fork. Dip the fork in sugar before pressing each cookie.
Bake cookies:
Bake the cookies for 8-10 minutes or until just set. Do not overbake. Let cookies cool on the pan on a cooling rack 10 minutes.
Remove the cookies from the pan and transfer to a cooling rack; let cool completely.
